Heverlee Premium Belgian Lager - 4.8%
Our very own Joris Brams was instrumental in creating and exporting the lager from Belgium. Having grown up just two miles away from the Abbey of the order of Premontre, Leuven, where he played as a child, Joris retained links with the monastery during his time at university and beyond. Fascinated by its history, he contacted the monks and gained access to their library, where he learned of an old brewery that was present on the site hundreds of years before. The monks had been pioneers, developing a light,fresh-tasting lager at a time when other Abbeys focused on heavier, darker ales. Working with the Abbey and with a local brewer, descriptions of the ancient beer were used to create Heverlee; a smooth pint that uses barley, specially selected hops and a much slower, more traditional brewing process than some bigger brands to restore original Pils bitterness to its taste.

Bombay Sapphire Gin - 40%

Bombay Sapphire has a unique distillation process: There are only four Carterhead stills working in the world today and are distinctive to Bombay Sapphire.

Unlike other gins which boil their botanicals with the spirit, the Bombay spirit is distilled alone. To achieve the unique flavour, the spirit passes through the botanicals in vapour form. This allows each delicate aroma to be fully absorbed. The result is a complex, yet subtle taste sensation.

Triple distilled, 100% neutral grain spirit is heated into vapour form. Vapour is sent through the rectifying column, unique to a Carterhead still. The baffle system, situated in the column, allows only the purest spirit to pass through.

Purified vapour passes through a copper basket containing 10 natural botanicals and absorbs their delicate flavours. The vapour is turned into liquid and received into a spirit safe as Bombay Sapphire.

The selection and balance of their botanicals is based on a recipe dating from 1761. The selection of botanicals used to create Bombay Sapphire is an extensive process with no expense is spared.

Bombay Sapphire is blended with pure water from Lake Vyrnwy and bottled.

Cockburns Special Reserve Port - 20%

Port is a fortified wine, meaning that its fermentation is interrupted through the addition of pure grape brandy in the proportion of 20% brandy to 80% wine, thus preserving some of the grapes’ natural sugars, so defining its full, rich character and ultimately its great longevity.

Cockburn's Special Reserve was originally introduced in 1969 as the first great Reserve Port and since that time its famous fruity and fullbodied quality, combined with a fine dry finish, has been the benchmark for all Reserve Ports.

Cockburn's, one of the greatest names in Port, led the development of vineyards in Portugal’s Upper Douro valley in the 19th and 20th centuries. The company is owned by the Symington family, Port producers for over 125 years.
